Ingredients:

  • 1 medium-sized pumpkin, peeled, seeded, and cubed
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 4 cups vegetable or chicken broth 
  • 1 teaspoon ground cinnamon (optional)
  • 1/2 teaspoon ground nutmeg (optional)
  • 1/2 teaspoon ground ginger (optional)
  • 1/2 cup coconut milk
  • 3 servings of Collagen Peptides Powder Unflavored
  • Salt and pepper to taste
  • Optional toppings: chopped parsley, or a drizzle of coconut milk or cream

Instructions:

1. Heat a large pot over medium heat and add a drizzle of oil. Add the chopped onion and minced garlic, and sauté until the onion becomes translucent and fragrant.

2. Add the cubed pumpkin to the pot and sauté for a few minutes until it begins to soften slightly.

3. Pour in the vegetable or chicken broth, along with the ground cinnamon, nutmeg, and ginger(these spices are optional). Stir well to combine.

4. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and simmer for about 20-25 minutes or until the pumpkin is tender and easily mashed with a fork.

5. Once the pumpkin is cooked, remove the pot from the heat and allow it to cool slightly.

6. Using an immersion blender or a regular blender, carefully puree the soup until smooth and creamy. If using a regular blender, work in batches and vent the lid to avoid any steam buildup.

7. Return the pureed soup to the pot over low heat. Stir in the cream or coconut milk and collagen powder until well combined. Simmer for an additional 5 minutes to let the flavors meld together.

8. Season the soup with salt and pepper to taste. Adjust the seasonings according to your preference.

9. Ladle the pumpkin soup into bowls and garnish with your choice of toppings, such as chopped parsley, or a drizzle of cream or coconut milk.
